Why it’s on the menu: Lentils are one of the steadiest blood-sugar carbs there is — high in fiber and protein, they slow the rise in blood sugar rather than spiking it. Paired with lean chicken and a pot full of anti-inflammatory aromatics, it’s a comforting, everyday soup that works with your metabolism, not against it.
Anti-inflammatory stars: turmeric · ginger · garlic · onion · leafy greens · olive oil
Serves 6 · about 45 minutes · one pot
Ingredients
- 2 Tbsp olive oil
- 1 lb boneless, skinless chicken thighs or breasts
- 1 yellow onion, diced
- 3 carrots, diced
- 2 celery stalks, diced
- 4 garlic cloves, minced
- 1 Tbsp fresh ginger, grated (or 1 tsp dried)
- 1½ tsp ground turmeric
- 1½ tsp ground cumin
- 1 tsp dried thyme
- ½ tsp black pepper (helps your body use the turmeric)
- 1¼ cups dried brown or green lentils, rinsed
- 6 cups low-sodium chicken broth
- 4 packed cups chopped kale or spinach
- Juice of ½ lemon; salt to taste
Method
- Heat the oil in a large pot over medium. Season the chicken with salt and brown 4–5 minutes per side; set aside.
- Add onion, carrots, and celery; cook 6–7 minutes until soft.
- Stir in garlic, ginger, turmeric, cumin, thyme, and pepper; cook 1 minute until fragrant.
- Add lentils and broth. Nestle the chicken back in. Bring to a boil, then simmer 25–30 minutes until lentils are tender.
- Lift out the chicken, shred with two forks, and return it to the pot.
- Stir in the greens and cook 3 minutes until wilted. Finish with lemon juice; adjust salt.
Low-carb swap: Cut the lentils to ¾ cup and add an extra cup of shredded chicken plus 2 cups of cauliflower florets and extra greens — you keep the hearty, spoonable texture with fewer carbs. Prefer it heartier? Serve over a scoop of brown rice.
