Why it’s on the menu: Lentils are one of the steadiest blood-sugar carbs there is — high in fiber and protein, they slow the rise in blood sugar rather than spiking it. Paired with lean chicken and a pot full of anti-inflammatory aromatics, it’s a comforting, everyday soup that works with your metabolism, not against it.

Anti-inflammatory stars: turmeric · ginger · garlic · onion · leafy greens · olive oil

Serves 6 · about 45 minutes · one pot

Ingredients

  • 2 Tbsp olive oil
  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 yellow onion, diced
  • 3 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 Tbsp fresh ginger, grated (or 1 tsp dried)
  • 1½ tsp ground turmeric
  • 1½ tsp ground cumin
  • 1 tsp dried thyme
  • ½ tsp black pepper (helps your body use the turmeric)
  • 1¼ cups dried brown or green lentils, rinsed
  • 6 cups low-sodium chicken broth
  • 4 packed cups chopped kale or spinach
  • Juice of ½ lemon; salt to taste

Method

  1. Heat the oil in a large pot over medium. Season the chicken with salt and brown 4–5 minutes per side; set aside.
  2. Add onion, carrots, and celery; cook 6–7 minutes until soft.
  3. Stir in garlic, ginger, turmeric, cumin, thyme, and pepper; cook 1 minute until fragrant.
  4. Add lentils and broth. Nestle the chicken back in. Bring to a boil, then simmer 25–30 minutes until lentils are tender.
  5. Lift out the chicken, shred with two forks, and return it to the pot.
  6. Stir in the greens and cook 3 minutes until wilted. Finish with lemon juice; adjust salt.

Low-carb swap: Cut the lentils to ¾ cup and add an extra cup of shredded chicken plus 2 cups of cauliflower florets and extra greens — you keep the hearty, spoonable texture with fewer carbs. Prefer it heartier? Serve over a scoop of brown rice.

Anti-inflammatory, fully cooked, and built to be kind to your whole body. Nourish · Strengthen · Lead.
